Bacon Wrapped Asparagus Bundles
These bundles can be easily prepared on an outdoor grill or in a hot oven.
1-1/2 lb asparagus spears, trimmed 4” to 5” long
Extra-virgin olive oil, for drizzling
A few grinds black pepper
4 slices center cut bacon or pancetta
Chopped chives or scallions (optional garnish)
1.) Preheat the oven, if using, to 400o
2.) Lightly coat asparagus spears in extra virgin olive oil. Season the asparagus with fresh black pepper.
3.) Take a quick count of the spear tips and divide into four separate bundles
4.) Gather each bundle and wrap a single piece of bacon or pancetta around the bundle to secure it together. Repeat with the remaining three bundles.
5.) Place bundles on a sheet pan and roast in the oven about 12 minutes until the bacon is crisp and the asparagus is tender. To cook on the grill, place bundles on hot grill and cover. Cook each bundle 10-12 minutes until the bacon is crisp and the asparagus is tender.
6.) Garnish, serve, and enjoy!
